The characteristics of this sake is it’s lingering aftertaste and long finish. The alcohol content feels higher that 15% because of the use of fresh sake in this aging process. I feel that the quality of the Sake is good. This sake has the potential to evolve further by aging it in the bottle for 2 to 5 years.

    • Aroma

      The spicy, smoky, and burnt aromas derived from the MIZUNARA combine with the acidity and oily impressions from sake. The acidity from the sake adds strength and richness to the aroma. Both mix in a complex manner to create a deeper aroma.
    • Taste

      On the front end, you get some volume with sweetness and umami. It has a smooth texture with acidity and some bitterness that spreads from the middle to the back of the mouth. The aftertaste is slightly pungent due to the acidity and alcohol, but the finish is long. Some sweetness and bitterness comes through from the MIZUNARA, giving this sake depth.
